Tapioca is natoriously a long dessert to prepare. Your best bet is to soak the pearls overnight, otherwise they take a couple of hours in a double boiler (if using milk). THEN you have to bake it for a minimum of two hours.

Minute tapioca takes less time but it's not as good. I love tapioca by the way, and always save room when I go to Fresh Choice as I don't have time to make it at home.

When I was a chef at New World Vegetarian in Oakland there was a little old vietnamese lady that would come in an make vietnamese tapioca pudding (with real chunks of tapioca root, along with various shapes of tapioca jellies). It was heavenly. I meant to come in on a day off and commit her recipe to memory.

Blueberry Tapioca sounds heavenly.

I used minute tapioca.. I just mixed milk, sugar, and tapioca, and let it boil, then let it cool. Usually it works, but this time it did not gelatinate.. I don't know what went wrong. I tried boiling it again this afternoon.. we'll see when I go home whether it worked.
